In-Chalet Catering

We appreciate that each of you will have very different expectations from your holiday. We are happy to tailor our services to accommodate your individual requirements. Ahead of your arrival in resort, our Chefs will take the time to speak to you personally, to discuss your particular preferences and requirements.

In-Chalet Catering includes the following:

  • The services of your Private Chef and Hostess (2 x Hostesses for parties of 8 or more)
  • Daily breakfast, including a fresh buffet selection & hot breakfast of your choice, cooked to taste
  • Freshly baked afternoon tea, served with a selection of teas, coffee & hot chocolate or mulled wine
  • Wonderful 4-6 course evening meals on 5 nights, including wines

Pan seared scallops on crabmeat and avocado with a beetroot jus
Terrine de Foie Gras with a blueberry compote and ginger biscuits
Poached quails’ eggs and chorizo, served on a crisp rocket and parmesan salad
Carpaccio of tuna, served with fresh figs and a citrus chilli cream
Open lasagne of Lobster with a creamy bisque sauce

Main Dishes
Roasted Duck breast with Fresh plum sauce, and seasonal vegetables julienne
Seared fillet of Sea Bass on a layered bed of spinach & olive potatoes with a creamy fennel sauce
Filet de Boeuf, drenched in a wild Cèpes sauce, served with potato dauphinoise & haricots verts
Slow roasted, herb-stuffed Poussin, served with wilted greens and a white wine jus
Pan seared venison, served with a port wine jus and roasted forgotten vegetables

Oozing chocolate fondant with caramelised chilli mango
Passion fruit trilogy
Spiced crème brûlée with orange sorbet and brandy snap
Raspberry and white chocolate soufflé, served with ginger ice cream
Basil sorbet, served with fresh strawberries, mascarpone and balsamic reduction

Each evening meal:

  • Begins with Champagne and canapés served by the fire
  • Is enjoyed with carefully selected paired wines throughout each course
  • Ends with carefully selected cheeses served with dessert wine
